This cheesy summer sandwich is literally my definition of perfection! Promise me you'll make this Burrata Caprese Sandwich before tomato season ends! (And on a side note, if you have an abundance of tomatoes that you are trying to use up, might I suggest making this liquid gold tomato confit!)

Why I Love This Recipe
I mean, what's not to love about a Burrata Caprese Sandwich. There's the Burrata that's in it of itself, perfect. Juicy summer ripe tomatoes that are the size of your head. Fresh Pesto which you can either make homemade or buy from your favorite market. Toasted Bread for that extra crunch. And then some oil, vinegar, salt and pepper to really bring all the flavors of this Burrata Caprese Sandwich together and let it shine.
Ingredients & Substitutions
- Ciabatta Bread – sourdough or any other crusty French bread would also work well
- Pesto – my favorite store bought one to use is from Eataly
- Burrata - buy 2 balls, you'll need it!
- Heirloom Tomato - 'tis the season. Get the most fragrant tomato you can find.
- Fresh Basil
- Olive Oil
- Red Wine Vinegar
- Flaky Salt and Pepper

How to Make Burrata Caprese Sandwich
Toast the sandwich bread with a little olive oil until just slightly golden.
Liberally slather a few large spoonfuls of pesto on the bottom half of the bread. Add large slices of tomato and season with salt and pepper. Add the burrata on top of the tomato and season with more salt, pepper, olive oil and a splash of red wine vinegar. Top with basil leaves and the top piece of bread. Cut the Burrata Caprese Sandwich into 4-5 servings.
Tips & Tricks
A few ways you can really up the ante on this Burrata Caprese Sandwich!
- You can scoop out a little bit of the bread. Use it at a later date to make breadcrumbs. But this way the bread to filling ratio is a little bit more aligned
- If you want to make homemade pesto, this Spinach Basil Pesto is my all time favorite recipe. You can't even taste the spinach, it really just helps to add some bright green color as basil can turn brown quickly once pulverized.
- Find the most freshly made burrata possible! If you live by an Italian market, this is your best bet!

What is a Caprese sandwich made of?
A typical caprese is a combo of fresh mozzarella, tomatoes and basil. You'll see that it can be amped up with salt, pepper, vinegar and olive oil. Many times you'll see the mozzarella is interchangeable with burrata. Either works to be honest.
What goes well with burrata?
The short answer is - ANYTHING. But in reality, that's not entirely true. Burrata is rich so I tend to use it on lighter dishes. A quick pasta with olive oil would be a great base for some burrata. However a buttery pasta might be too over the top and over powering. If you're going to use burrata (its expensive) you want it to really shine so stick to lighter flavors so it can have it's moment in the spotlight.
