This goat cheese avocado crostini is quite possibly the easiest appetizer of all time. Crostini are thin slices of baguette brushed with olive oil and toasted until crisp, then piled with toppings, and this California-inspired version smashes ripe avocado with a squeeze of citrus, adds creamy crumbles of goat cheese, and finishes with flaky salt, cracked pepper, and a few microgreens. It comes together in about 10 minutes and looks far fancier than the effort it takes. Crisp toast, creamy avocado, and tangy goat cheese in every bite

  • Slice the bread thin and even. About a quarter inch so it crisps all the way through instead of staying chewy.
  • Brush with olive oil before toasting. A light coat on both sides gives you golden, crackly edges.
  • Toast until deeply golden. Pale toast goes soft the second the avocado hits it. You want real crunch.
  • Use ripe but firm avocado. It should give slightly when pressed; mushy avocado turns gray and watery.

Ingredients
  

  • 6 pieces super thin slices of french bread
  • olive oil as needed
  • 1 avocado
  • freshly squeeze lemon juice
  • Kosher salt and freshly cracked black pepper to taste
  • 2 tablespoons goat cheese
  • micro greens as needed

Instructions
 

  • Arrange the thin slices of french bread on a baking sheet and drizzle with olive oil.
  • Toast the bread until the bread is just golden brown.
  • Remove the pit from the avocado and discard. Remove the avocado from the skin and place the avocado flesh into a medium bowl and mash it with a fork and a squeeze of the fresh lemon juice. Season with salt and pepper as needed.
  • Slater the mashed avocado on top of the toast, followed by the crumbled goat cheese and garnish with the micro greens.
  • Serve immediately.

Notes

This is a great appetizer as-is but you can also serve it alongside chicken and pasta for a full meal.
