I'm currently having a love affair with my instant pot. I know I'm totally late to the band wagon, but now I'm on it! It's everything. But I can't forget about my slow cooker. It's been in my life for ages and I will always love the fact that I can put an entire pork butt into my slow cooker with a few other ingredients, turn it on, and then leave the house and come back to a perfect batch of pulled pork. I even have a stovetop carnitas tacos, if you do not have a slow cooker. And, a chuck roast tacos recipe thats prepped in the oven. These Pulled Pork Tacos with Avocado Crema are exactly what I want come game day next weekend. It's a batch of really easy pulled pork, a quick tangy slaw and an avocado sauce that will bring everything together. It's sweet and salty and creamy and tangy and all in all it's PERFECT!!! Make it, you won't be disappointed!

Sweet Pulled Pork Tacos with Avocado Crema

Ingredients
  

For the Pork

  • 2 cups chipotle salsa
  • 4 ounces canned green chilies
  • 2 tablespoons brown sugar
  • 3 pounds pork butt
  • Kosher Salt

For the Avocado Sauce

  • 4 green onions sliced
  • 2 whole avocados
  • 4 tablespoons lime juice
  • 2 tablespoons sour cream
  • ¼ cup cilantro
  • 4 cloves garlic
  • 1 teaspoon kosher salt

For the Slaw

  • 1 cup shredded green cabbage
  • 1 cup shredded red cabbage
  • ½ yellow onion thinly sliced
  • cup apple cider vinegar or red wine vinegar
  • ¼ cup water
  • ½ teaspoon salt
  • ½ teaspoon brown sugar
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes

Assembly:

  • Small flour or corn tortillas
  • Extra green onions

Instructions
 

For the pulled pork:

  • In the bottom of a large crock pot, mix salsa, green chilies and brown sugar. Add the pork and sprinkle with salt, cook on low for 6-8 hours or high for 4-6 hours. Take the meat out of the crockpot and shred with 2 forks. Return to the pot and mix with the sauce.

For the avocado cream sauce:

  • Slice green onions and mash the avocados. Add lime, sour cream, cilantro, garlic and salt. Mash to combine.

For the slaw:

  • Combine the cabbages, and onion in a large bowl. Combine the remaining ingredients in a separate bowl and then pour over the cabbage mixture and stir. Cover and refrigerate for at least 2 hours before serving. Drain before serving.
  • To serve, put some slaw on top of a tortilla, followed by a few spoonfuls of the pork and then a spoonful of the avocado sauce and green onions on top.

Notes

Make the slaw at least 2 hours in advance. It could go even longer, too.

  2. Is there a reason you don't pressure cook the pork in IP or don't use the IP slow cooker function? Just curious. I have never owned a slow cooker but love the IP. Thanks.

  3. Made these pork tacos last night. Everyone at my table raved about them. Pork was excellent with the chipotle salsa and chili’s. The slaw was out of this world! Husband couldn’t get enough! Last but not least the crema was my favorite! Can’t wait to make these again! I think these will be great for a summer time party on the patio ! You score again Gabby! Thank you!!!!

  4. Looks amazing!! I want to try via instant pot vs. crock pot. As a total newbie to the instant pot, I want to make sure I don’t screw up the meat. Any tips you can offer in this regard re ordering of ingredients and cook time settings?

  5. Just curious, the photo doesn't show you using the left overs from the crockpot, just the pork and the avocado creme and you don't mention it. You just omit all the beans, salsa, chilies etc?? Seems like a waste, no?

    1. Hi Jay! I use all that stuff in the crock pot for sure! it's just buried into the back of the photo so you can't see it. but that stuff is the best 🙂 You've gotta put it into the taco for sure.
