  • 2 cups Vanilla Bean Ice Cream softened
  • 2 cups large marshmallows
  • 9 large Graham Crackers

Substitutions & Swaps

🍦 Ice Cream

  • Chocolate, coffee, vanilla (called for) - The three-layer combo that tastes most like a s'more with a grown-up coffee note
  • All chocolate - Skip the layering for a faster, kid-friendly version
  • Cookies and cream or rocky road - Lean into the s'mores vibe with chunks built in
  • Dairy-free ice cream - Coconut or oat-based pints work for a dairy-free batch

🍪 Cookie or Cracker

  • Graham crackers (called for) - The classic s'more base; sturdy enough to hold the ice cream
  • Chocolate graham crackers - Doubles down on the chocolate
  • Chocolate chip cookies - Soft cookies make it more decadent and less crunchy
  • Chocolate wafers - Thin and crisp for a more classic ice cream sandwich bite

🔥 Marshmallow

  • Large marshmallows (called for) - Torch them for that signature campfire char
  • Marshmallow fluff - Easier to swirl through the softened ice cream
  • Mini marshmallows - Quicker to toast and distribute more evenly

➕ Add-Ins

  • Chopped chocolate or fudge ripple - Folds extra chocolate into the layers
  • Crushed graham crackers in the ice cream - Adds texture and reinforces the s'more flavor
  • Flaky salt - A pinch over the marshmallow balances the sweetness
  • Dip the edges in chocolate - Roll the assembled sandwich edges in melted chocolate or mini chips

🍦🔥🍪 Tips & Tricks for the Best S'more Ice Cream Sandwiches

Torched marshmallow, three creamy layers, all made ahead

  • Soften the ice cream just enough to spread. Let it sit until it is spreadable but not soupy; fully melted ice cream loses its structure and refreezes icy.
  • Line your pan with parchment overhang. Leaving flaps on two sides lets you lift the whole frozen slab out cleanly before slicing.
  • Freeze each layer before adding the next. A short freeze between the chocolate, coffee, and vanilla keeps the layers distinct instead of blurring together.
  • Torch the marshmallows before folding them in. Char them on a sheet pan or skewer, let them cool slightly, then swirl through the softened vanilla layer.
  • Freeze the slab rock solid before slicing. At least 6 hours, ideally overnight; a soft slab smears instead of cutting into clean squares.
  • Slice with a hot, dry knife. Run the blade under hot water and wipe it between cuts for sharp, clean edges.
  • Work fast once it is sliced. Sandwich each square between graham crackers right after cutting, then return them to the freezer immediately.
  • Wrap each one individually. Parchment then foil prevents freezer burn and makes them grab-and-go for a party.
  • Use premium ice cream for cleaner slices. Denser, lower-air pints hold their shape far better than cheap, airy ones.
  • Let them sit one minute before serving. A short rest softens the graham crackers just enough to bite without the ice cream squishing out.

FAQs

What is a s'more ice cream sandwich?

A s'more ice cream sandwich is a frozen dessert that layers ice cream and torched marshmallows, freezes it solid, then sandwiches a sliced square between two graham crackers. This version uses chocolate, coffee, and vanilla ice cream for a campfire-inspired flavor. It is a make-ahead twist on the classic s'more.

Can I make these ahead and freeze them?

Yes, they are designed to be made entirely ahead. Wrap each assembled sandwich tightly in parchment and then foil, and freeze for up to 2 weeks. Let them sit for a minute before serving so the graham crackers are easier to bite.

How do I toast marshmallows without a torch?

Spread the marshmallows on a sheet pan and broil for 30 to 60 seconds until golden, watching closely. A kitchen torch gives more control if you have one. Let them cool slightly before folding into the softened ice cream.

Can I use store-bought ice cream?

Definitely, store-bought ice cream is exactly what this recipe calls for. Just soften it enough to fold in the marshmallows and layer it, then refreeze. Premium brands with less air hold their shape better when sliced.

How do I slice ice cream sandwiches cleanly?

Freeze the ice cream layers rock solid, then cut with a knife warmed under hot water and wiped dry between cuts. Work quickly so the ice cream does not melt. Sandwich each square between graham crackers right after slicing.
