How has What's Gaby Cooking been around for so many years and yet we've never talked about Chicken Shish Kabobs?!? These things are the BEST. Especially when served with my famous basil vinaigrette!

My dad makes the best Chicken Shish Kabobs ever and I've taken his recipe and added my spin because THAT'S HOW I ROLL. Everything is perfectly seasoned with my Go To Seasoning blend. The chicken is threaded on the skewers nice and tight so everything stays juicy. It's served with basil vinaigrette because hello, have you tried it yet? GAME CHANGER. It's going to be the best thing you've made all week. You get the idea.

This is one of those recipes that's going to be in your weekly summer rotation starting today! Whip these Chicken Shish Kabobs up, serve them with a big salad, or a bowl of pasta or rice, or wrap them in some pita and add some grilled veggies... you get the idea. They are so good, you'll want to eat them every which way! And if you want to switch it up sometime, use the cilantro vinaigrette instead. Just as good and a totally different flavor profile!

My Dad's Chicken Shish Kabobs recipe that is seriously one for the record books! YOU WILL LOVE!

Ingredients
  

For the chicken:

  • 3 tablespoons Gaby’s Go To Seasoning
  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon coarse kosher salt
  • 1 teaspoon freshly ground black pepper
  • 6 garlic cloves roughly chopped
  • 1 lemon juiced
  • 1 lemon cut into wedges/sliced for serving
  • 3 pounds boneless skinless chicken thighs and/or breasts cut into 1 ¼-inch cubes
  • 1 recipe Basil Vinaigrette

Instructions
 

  • Combine the seasoning, olive oil red wine vinegar, salt, pepper, garlic and lemon juice in a bowl; whisk to combine. Add in the chicken. Cover and chill at least 1 hour.
  • Prepare grill over medium-high heat. Thread chicken pieces on skewers, dividing equally. Discard marinade in bowl. Sprinkle each skewer with additional gaby’s go-to seasoning.
  • Grill chicken until golden brown and cooked through, turning skewers occasionally, 10 to 12 minutes total. Transfer skewers to platter. Serve with basil vinaigrette and extra lemon wedges

Notes

I don't recommend mixing breasts and thighs - choose one or the other so they cook evenly. Or you can make some skewers of each type, keeping in mind that the dark meat takes longer to cook.

    I really enjoy your recipes and would love to try your "go to seasoning". Is the recipe available? I tried to order from WS, but it's not available to ship and I live 90 minutes from the closet store (and it looks like it is out of stock).

    1. it's in stock!! you just have to order 2 in order for them to ship per some weird UPS standards 🙂 But if you dont want to buy, you can use any of your other fav spice blends to season the chicken

    My sis-in-law made this for my husband and I. Absolutely the best chicken we ever ate. My husband went to bed talking about it and woke up the next day talking about it. Then he ate the leftovers for lunch!

    De-LISH and Flavorful Chicken!
    My daughter and I made the chicken part this last night!!
    We marinated the chicken (then because we had a variety of peppers and red and white onions, we made Kabobs. We served with couscous and salad. The family gave the chicken 5 hearts. It will definitely add to summer rotation.
    We are looking forward to making the basil vinegarette soon!

  6. I can’t get a hold of your seasoning blends very easily, can you tell me what spices I could try as a sub for it please

  7. I would LOVE to make this recipe, but your seasoning isn't gluten free. Both of my kids have celiac so it's not safe for us to purchase. The ingredients themselves are gluten free, but there's a warning saying they may come into contact with wheat. You'd have a much larger audience if you ensured your products were safe from gluten!!

  8. Hi Gaby! This looks SO GOOD! Unfortunately, we don't have a grill. How would you recommend cooking these in the oven? Hoping I can still make it work!

  9. My family & I LOVE this recipe!!! Is there a version where I can sear the chicken & cook the rest in the oven on my grill pan? My kitchen get so smoky & I haven’t graduated to our outdoor grill yet . Thank you

  10. Is there something I could substitute for your seasoning blend? I plan on buying it when I'm in the states in a month, but no WS in Malaysia 🙁
