You’ve heard me say it again but this instance feels the most fitting….this recipe I’m sharing today IS EVERYTHING! Everything Pretzel Dogs to be specific, because it’s Wednesday and let’s celebrate!
Prep Time 1 hour 30 minutes
Cook Time 12 hours
Total Time 13 hours 30 minutes
Course Main Course
Cuisine American
Servings 10 people

Ingredients

  • 1 ½ cups warm water 110 to 115 degrees F
  • 1 tablespoon sugar
  • 2 teaspoons kosher salt
  • 2 ¼ teaspoons active dry yeast
  • 22 ounces all-purpose flour approximately 4 ½ cups
  • 2 ounces unsalted butter melted
  • 2 tablespoons Italian Seasoning
  • ½ cup grated parmesan cheese
  • Vegetable oil for pan
  • 10 cups water
  • 10 hot dogs
  • cup baking soda
  • 1 large egg yolk beaten with 1 tablespoon water
  • 4 tablespoons Gaby’s This is Everything Seasoning

Instructions

  • Combine the water, sugar and kosher salt in the bowl of a stand mixer and sprinkle the yeast on top. Allow to sit for 5 minutes or until the mixture begins to foam. Add the flour, butter, Italian seasoning and parmesan and, using the dough hook attachment, mix on low speed until well combined. Increase the speed to medium and knead until the dough is smooth and pulls away from the side of the bowl, approximately 4 to 5 minutes.
  • Remove the dough from the bowl, clean the bowl and then oil it well with vegetable oil. Return the dough to the bowl, cover with plastic wrap and sit in a warm place for approximately 50 to 55 minutes or until the dough has doubled in size.
  • Preheat the oven to 450 degrees F. Line 2 half-sheet pans with parchment paper and lightly brush with the vegetable oil. Set aside. Meanwhile, bring the 10 cups of water and the baking soda to a rolling boil in an 8-quart saucepan.
  • In the meantime, turn the dough out onto a lightly oiled work surface and divide into 10 equal pieces. Roll into ropes, and then roll the rope around an entire hot dog, making sure to secure the ends.
  • Place onto 2 sil-pat lined sheet pans.
  • Place the pretzel dogs into the boiling water, 1 by 1, for 30 seconds. Remove them from the water using a large flat spatula. Return to the half sheet pan, brush the top of each pretzel with the beaten egg yolk and water mixture and sprinkle liberally with the This is Everything Seasoning. Bake until dark golden brown in color, approximately 12 to 14 minutes.
  • Transfer to a cooling rack for at least 5 minutes before serving

Notes

The amount of time and steps are completely worth it here! You can easily freeze the baked dogs to enjoy another day.

  1. Made these tonight for the Super Bowl and they were phenomenal! I added 2 tsp malt powder because i had some in the house already. I will make these all the time now as both hot dogs and just regular pretzels.

This recipe turned out amazing. I rested the dough overnight in the fridge, but otherwise followed the instructions. Perfect pretzely consistency and great flavor. Will make again and again!

Made these for dinner tonight and they were amazing! I used cheesy brats instead of regular hotdogs and they were even more perfect!!!

    1. Mmm Lindsey that sounds genius! Looking for Super Bowl recipes and I think I've found the winner.

  4. These are so delicious! Its great to make together with kids and fill you up for a tasty lunch. Also a yummy alternative to hotdog buns, perfectly chewy on the inside with a crispy pretzel crust. Will definitely make again.

I was shocked how good these turned out! Was not sure if I would do them justice but once again just followed the recipe and they were great. Made my family done then went my sister’s and made her family some. EVERYONE LOVED THEM

  6. Hi Gaby!
Thanks for this recipe, I am so excited to try it 🙂

I have a family of 3 (2 adults and 1 small child), and I don't think we would be able to finish all 10 everything pretzel dogs in one sitting and soft pretzels are always better fresh baked. Can these be prepped and frozen before baking so they can be baked fresh to serve?

    Thanks!!

    1. Hey Katie! I haven't tested it that way but I think it would totally work! You could also cut the recipe in half if that would be easier! xx

    2. Has anyone tested preparing the dough beforehand? Thinking of prepping the dough 3 days before cooking...Any comments or tips are appreciated!

  7. I haven't been able to get the spices yet In Canada. I Really want to make these. What can I use to sprinkle on the outside that will still be as good?

  8. Potato rolls are my favorite buns but after seeing this recipe I think we have a new winner!
