Hi Everyone!! Happy Friday. I'm beyond excited to introduce you to Diana Kim!! She's the mastermind behind this Korean BBQ Dinner Party menu we are about to share. Get ready, these recipes are incredible!
Diana has been a part of the What's Gaby Cooking family for years. She's Adam's right hand gal and the woman can COOK! She's a mom of two, a total bad ass in the kitchen, and surprises the whole team on a very frequent basis with an amazing family meal before we launch into a day of shooting. The 6 recipes you'll find below are not typical Korean BBQ vibes but it's an incredible collection of Korean recipes that all support the most amazing Stir Fried Pork Belly with Kimchee! Spicy Cucumber Salad, Spicy Stir Fried Eggplant, a Kimchi Pancake, Scallion Pancakes, and Korean Potato Salad - all delish and recipes and as Diana says, "food your Korean mom would make you"
Spicy Cucumber Salad - we all know I live for a cucumber salad so when Diana made this Spicy Cucumber Salad, I about died. It's refreshing with a kick.
Korean Potato Salad - Creamy delish potato salads but with a spin. You'll be obsessed.
Kimchi Pancake - When I tell you that we all demolished this Kimchi Pancake like vultures, I'm not kidding. Take a hand from the store and use pancake mix (linked below) and you'll have this dish on the table in no time. Also an incredible quick and easy meal if you want to just serve it on it's own!
Spicy Stir Fried Eggplant - it's basically a savory candy in the fact that it's so incredibly addictive. One for the books, you'll want to make it always.
Scallion Pancake - same as the above with scallions. Mind boggling good.
Stir Fried Pork Belly and Kimchee - when I tell you this dish will blow your mind, I am not lying. Diana knocked it outta the park with this easy main dish. It's fantastic.
Pick up these pantry staples at your local H Mart or order them online
Korean Red Pepper Powder - A coarse gochugaru red pepper powder. The heat from this Korean chile flake is more gentle compared to crushed red pepper flakes, and it adds the most incredible subtle smoky and sweet flavor.
Gochujang - A spicy red chile pepper flake paste with an umami flavor.
Soy Sauce - This rich Korean soy sauce adds so much flavor to any dish.
Sesame Oil - Korean sesame oil has a nutty and toasty flavor that's great in sauces, marinades, and even used as a finishing oil.
Roasted Sesame Seeds - A wonderful garnish to dishes.
Korean Pancake Mix - For making Kimchi Pancakes and Scallion Pancakes.
