I am a sucker for a good salsa. Currently my favorite store bought salsa is the Salsa Especial from Trader Joe’s. I literally go though 1 container every few days. Recently I found this tomatillo salsa recipe from Tyler Florence and knew that I would love it! It is so delicious and I feel better eating bowls and bowls of this because it is homemade
- 1 pound tomatillos, husked and rinsed
- 1 jalapeno, stemmed
- 1 small Spanish onion, quartered
- 5 to 6 garlic cloves
- 1 tablespoon kosher salt
- 1 bunch fresh cilantro, chopped
- 2 lime, juice
- Kosher salt
Bring a pot of water to a boil and add the tomatillos, jalapeno, onion, garlic, and 1 tablespoon salt. Reduce the heat and simmer gently for 5 to 10 minutes until the tomatillos are soft but have not burst. Drain and reserve cooking liquid. Add the cooked vegetables to a food processor with the cilantro leaves and lime juice. *Pour in 1/4 cup of the reserved cooking liquid and process to a coarse puree – be careful when you process the hot liquid as it will expand – so make sure you hold the lid down firmly. Taste and adjust seasoning with more cilantro, lime juice, or salt according to preference.
Seriously it is pure deliciousness! If I wasn’t starving when I made this, I would have made fresh tortilla chips… but I was lazy and starving… oh well, next time!

I will be heading for the farmers market this weekend so I can make this one for our backyard grilling extravaganza! It sounds yummy!

That salsa looks great. I always think of myself as more of a tomato-based salsa person, but maybe I'll give the tomatillos a try!

Tried this today and it is very good. Maybe my lime was too big, but I only used one and it was a little too limey. I’m going to mash an avacado to make it Guacatillo. Our favorite salsa at our local Cardenas Market. I love this site!!!
