Who doesn't like 7 Layer Dip? Layers and layers of delicious things all piled up to make the most glorious snack there ever was!

Here's the thing - 7 Layer Dip is incredible. It's all my favorite things in 1 vessel and it's consumed with tortilla chips, what's not to love. BUT... because it's so simple, it has to be done right. No shortcuts when it comes to store bought guacamole. No skimping on the cheese. In my case, hold the black olives and add more herbs. And make sure you're using a great salsa. All of that... and then you're in business! Let's break it down shall we:

Here's how to make the BEST 7 Layer Dip

  1. Bottom layer: re-fried beans. If you're near a Trader Joe's and can grab the refried beans that have a little bit of salsa mixed in, that's a pro-move!
  2. Next layer: Sour Cream. Full fat here guys. Always. Give it a healthy layer so every bite is creamy and delish.
  3. Coming up next: Guacamole. Homemade is def preferred, otherwise get it freshly made from your local market.
  4. Next: copious amounts of Shredded Cheddar Cheese.
  5. On top of that... pico de gallo or your favorite salsa!
  6. Scallions come next and are an integral part of the perfect bite!
  7. Last but not least... Cilantro. Some people do olives and while I LOVE an olive, it doesn't belong in this dip if you ask me!

Layer those delicious ingredients in a vessel or plate or whatever else you'd like and serve them up with a bag or two of tortilla chips and you're in business! And if you're going for the gold, here's a tutorial on how to make your own tortilla chips that are fresh AF!

Ingredients
  

  • 1-2 cups refried beans
  • cup full fat sour cream
  • 1 cup homemade guacamole
  • 1 ½ cups freshly shredded cheddar cheese
  • cup homemade pico de gallo or your favorite salsa
  • ½ cup finely sliced scallions
  • ½ cup chopped cilantro
  • your favorite brand of tortilla chips

Instructions
 

  • Layer the ingredients in order of appearance and serve.

    Some comments mention bacon and it seems to be in the photo but it is not in the recipe…..should I add it?

    You were right Gaby, freshly grated cheese and homemade guac made this a hit at the family birthday party. My nieces who are very picky and were not happy that there was guac in this but as soon as it was put together they tried it and could not be stopped!! Here's hoping to turn them in to guacamole converts! Thanks for the great recipe.

  4. I definitely want to make this tomorrow. So if I add, say, a tablespoon or two of salsa to the refried beans and mix together that'll be enough? I want to make sure the beans have some sort of (edible) flavor and this seems like a good alternative to taco seasoning.

    1. Nicole, You can totally about a few tbsp of salsa. I'd probably go for 4 tbsp or so of salsa so people can taste it 🙂

  5. For some reason, I have an aversion to sour cream too! I wish I could get over it like you did! Last night I tried some jalapeno sour cream and it was OK, so maybe I'm getting there! 🙂 This 7-layer dip looks amazing though! Perfect for the superbowl, and to console myself that the niner's aren't playing ... wah.

  8. I used to steer clear of the 7-layer dip, too but have seen the light now. Add some bacon and you've got a sure-fire winner!
