I posted this on Instagram a few months ago and have made it for my daughter 1x a week since. It's the perfect little vehicle for protein, veggies, guacamole and tons of flavor. She's obsessed and I pop them in my mouth for snacks too. You could easily make these in large format burgers for bigger kids and adults!
Ingredients
- Onion & Garlic - I use a mix of red onion and sweet onion
- Red Bell Pepper - a key ingredient for fajitas
- Lime Juice - helps develop the flavor of the fajita veggies
- Ground Chicken - make sure not to use anything too lean and remember that fat is flavor!!
- Spices - garlic powder, ground cumin, ground chili powder, and kosher salt
- Olive Oil - for cooking
How to Make Fajita Burgers
Start by making the pepper mixture. Sauté the diced peppers and onions until soft, then add the garlic and sauté for 60 seconds until fragrant. Remove from the heat, let cool slightly, and season with salt, pepper, and lime juice.
Then get started on the chicken fajita burgers. Mix ground chicken, seasonings, and cooled cooked fajita veggies along with any oil still in the pan until well combined. Form the mixture into small-ish patties, fit for a toddler.
Reheat the same skillet over medium high heat with an additional tablespoon of oil. Cook the fajita burgers for about 6 minutes per side until cooked through. Serve with guacamole and pico de gallo / or chopped cherry tomatoes.
Variations and Substitutions
Red Bell Pepper - Feel free to use an orange or yellow bell pepper instead.
Ground Chicken - You could also use ground turkey or ground beef
Tips & Tricks
I love serving these with my homemade guacamole and Pico de Gallo. Yes, my toddler eats Pico - she's clearly cut from the same cloth as me!
If you want to double the fajita veg mixture, it's great to serve as a side dish or mix it into some pasta the following day!

Ingredients
For the Peppers
- 2 tablespoons olive oil
