I feel like we’ve really upped the ante on drinks here at What’s Gaby Cooking. Partly because it’s summer and obviously we are down for a cocktail, and partly because my bff Matt said that was one of the major pieces of feedback he got when my last book launched… MORE COCKTAILS!! Today we’re hitting the tropical drinks HARD and bringing you 3 variations on some of my favorite cocktails with my favorite coconut water.
If you’ve never heard Harmless Harvest Coconut Water, you’ve clearly been living under a rock. Thomas and I have been obsessed for years. I remember when it first came out, whoever was at the market would always grab 2 bottles to bring home. It’s so incredibly flavorful, it’s real, and because of that it doesn’t have any funky aftertastes like some of the other coconut waters out on the market. Trust me - I’ve done my research and literally nothing else compares. Harmless Harvest never high heat pasteurizes or cooks their product, which ensures that they never compromise on flavor. It’s without a doubt the best in the biz and today I’m teaming up with them to add it to some of my favorite summertime cocktails.
We’ve got a coconut margarita, a coconut mojito, and a blueberry basil coconut spritz (which actually doesn’t have booze in it but you could easily spike it with your fav alcohol of choice if you wanted to turn it into a cocktail. Each of these drinks is fantastic, fruity, tropical because of the coconut vibes and incredibly flavorful. So seeing as how it’s Wednesday, aka almost the weekend, go grab a few bottles and get ready to make the best drinks of your LIFE!
Blueberry Basil Coconut Spritz
½ cup fresh blueberries
5-6 pieces fresh basil
1 ounce freshly squeezed lime juice
6 ounces Harmless Harvest Coconut Water
Splash of club soda
Muddle the blueberries, basil and lime juice in the bottom of a cocktail shaker. Add the Harmless Harvest Coconut Water, along with a few pieces of ice, and secure the lid onto the shaker. Shake for 30 seconds until the liquid is chilled. Pour the spritz, muddled bits and all, into ice-filled cocktail glasses and top with a splash of club soda. Serve immediately
Skinny Sparkling Coconut Margarita
5 ounces blanco tequila
5 ounces freshly squeezed tangerine juice
3 ounces lime juice
2 ounces Harmless Harvest Coconut Water
Lime wheels or wedges to garnish
Combine, shake, serve over ice.
Coconut Mojito
1 bunch mint leaves
2 cups Harmless Harvest Coconut Water
5 tablespoons freshly squeezed lime juice
3 ounces white rum
2 teaspoons sugar
Place the mint leaves in a jar and muddle it by pounding and twisting on the mint leaves lightly. Add the coconut water, lime juice, white rum and sugar. Stir to combine well or until the sugar dissolves. Serve over ice with more mint if desired.
