Okay okay - maybe the ultimate bagel breakfast sandwich and a mimosa - that makes for the best start to a weekend!

But it's really all about the bagel. All the best ingredients layered between a perfectly cooked and toasted bagel? Oh man - does it get much better than that?? My perfect bagel sandwich comes plenty of cheese, avocado, crispy bacon and heirloom tomato slices. It's easy to make for yourself, or easy to make if you're feeding a crowd. Serve them up in your kitchen, or individually wrap them up in parchment paper and take them on the go! They are good at room temp or warm!

Ingredients
  

  • 1 plain or everything bagel
  • 3-4 slices avocado
  • 1 thick sliced tomato
  • 2 pieces crispy bacon
  • 1 slice fontina cheese
  • 1 egg scrambled

Instructions
 

  • Slice the bagel in half.
  • Lay the piece of cheese on the bottom part and place into a toaster oven to melt. Top with the avocado, tomato, bacon and egg and place the other half of the bagel on top.
  • Slice down the middle and serve.

Notes

Obviously you can go ahead and swap out your favorite fillings and spreads here! Even make two at a time and wrap one up for the next day.

  1. I'm more of a sweet breakfast person, but I should consider switching. Eggs and avocado are just the best.
