I'm keeping this light and bright to start this week when it comes to dinner. Here we go... Week 28 coming your way.
Sunday - Steamed Clams for dinner!! AND grilled artichokes on the side!
Monday - Meatless Monday is all about this Havarti Quinoa situation! Except I'm not using mayo and adding avocado instead!
Tuesday - Asian Chicken Salad for dinner tonight! And I'll have the leftovers for lunch the next day!
Wednesday - We're making NACHOS!! And this is the only way you should ever make nachos for the rest of your life!
Thursday - Clearly I'm having a major Mediterranean moment because it's Greek Chicken for the win! And a Zucchini Carpaccio on the side!
Friday night we're doing fish tacos and having some friends over to celebrate Thomas' birthday when we get home from vacation!!
For breakfast were going with my fav Egg Bites!
And a little dessert that's mostly fruit so.... HEALTHY!
