I overdid it a bit this weekend, I ate a burrito the size of my face, about 3 lbs of guacamole, and more tortilla chips than I care to admit! So I’m keeping this light and bright to start the week when it comes to dinner. Here we go… Week 28 coming your way.

Monday – Meatless Monday is all about this Havarti Quinoa situation! Except I’m not using mayo and adding avocado instead!
