I overdid it a bit this weekend, I ate a burrito the size of my face, about 3 lbs of guacamole, and more tortilla chips than I care to admit! So I'm keeping this light and bright to start the week when it comes to dinner. Here we go... Week 28 coming your way.
Monday - Meatless Monday is all about this Havarti Quinoa situation! Except I'm not using mayo and adding avocado instead!
Tuesday - Asian Chicken Salad for dinner tonight! And I'll have the leftovers for lunch the next day!
Wednesday - We're making NACHOS!! And this is the only way you should ever make nachos for the rest of your life!
Friday night we're doing fish tacos and having some friends over!!
For breakfast were going with my fav Egg Bites!
And a little dessert that's mostly fruit so.... HEALTHY!
