Shimp, Mango and Traditional Trio of Guacamole

Hi. My name is Gaby and I am addicted to Guacamole.

Yup. It’s true. I live off of guacamole. I eat it at least 7 times a week and its pretty much the only thing I crave on a regular basis. I think I should be a walking ad for avocados, but I probably consume more of them than any other human being.

A few weeks back I ventured to a fabulous restaurant with Matt, who is hands down one of my favorite people on this earth, and the second I walked in the door, I left like I had left California and I was sitting in a resort somewhere in Mexico. So what did we do, well naturally we ordered about 20 margaritas, okay maybe not quite that many, and then this life changing trio of guacamole. I tried to be as lady like as possible and not devour the entire thing before Matt could have one chip (not that he would have judged me… because he was my eating partner in Portland just a few months back) but it was almost impossible because it was so freaking amazing.

Fast forward about 7 days and we went back, but this time we brought along 2 more of my favorite people ever, Brooke and Adam. And guess what we did!?! Well, we ordered about 40 margaritas (naturally we doubled the amount of tequila consumed because there are now 4 of us – look mom I am still good at math!) and then more trio’s of Guacamole. That was it. I decided right then and there that I will never again just make one kind of guacamole per setting… eating it in trio’s is far more exciting!

So that’s what I have been doing ever since. I have made Shrimp Guacamole, Mango Guacamole, Original Guacamole, Crab Guacamole, and Chive Guacamole and let me tell you… not one of them has disappointed this Guacamole addict.

Mango Guacamole

Ingredients:
3 avocados
1 lemon, juiced
1/4 red onion, finely chopped
1/8 cup cilantro, finely chopped
1 Mango, chopped
salt and pepper to taste

Directions:
Combine all ingredients in a large bowl, except the mango, and mash with a fork until half smooth and half chunky. Toss the mango in at the end.

Shrimp Guacamole

Ingredients:
3 avocados
1 lemon, juiced
1/4 red onion, finely chopped
1/8 cup cilantro, finely chopped
1 cup cooked Shrimp, chopped
salt and pepper to taste

Directions:
Combine all ingredients in a large bowl, except the shrimp, and mash with a fork until half smooth and half chunky. Toss the shrimp in at the end.

Gaby’s Perfect Original Guacamole

Ingredients:
3 avocados
1 lemon, juiced
1/4 red onion, finely chopped
1/8 cup chives, finely chopped
1/8 cup cilantro, finely chopped
1 tomato, chopped
salt and pepper to taste

Directions:
Combine all ingredients in a large bowl and mash with a fork until half smooth and half chunky.

I LOVE mango salsa, so why not mango guacamole! Never thought of it before! Thanks for this great summer treat!
