Banana Bread

Banana Bread was always something that was readily available in my house while I was growing up. My sister and I would eat it for breakfast, for snacks, pretty much anytime we needed a little something to nibble on. Since moving to college, and then on to LA, I have been making Banana Bread frequently just to satisfy my cravings for home. This time I decided to make mini muffins so I can easily grab them on the go!
Here is what you need:

3/4 cup butter
1 1/2 cup sugar
2 large eggs
4 tsp milk
1 cup bananas (I freeze 4 banana’s for a few days and then de-thaw them before making the banana bread)
2 cups all purpose flour
1 tsp baking soda
1/2 bag chocolate chips

In a large mixer combine the butter and the sugar for 2 minutes. Add the eggs, one at a time. Add the milk and bananas. Lastly, add the flour, baking soda and combine. Stir in the chocolate chips by hand. Transfer batter into 2 buttered loaf pans. Bake at 350 degrees for about 40 minutes until a knife can be inserted in the center and come out clean.

And there you have it! Some delicious Banana Bread for breakfast or snacks or whatever you want.

I never thought of putting chocolate chips in my banana bread!! That looks soo yummy!!

Mini banana bread muffins are a great idea and I love the chocolate chips inside there! Very nice!

I was just thinking about banana bread and happen to have some mini loaves just waiting for something to put in them.
