No matter what the occasion, the answer is always guacamole. And seriously people, what’s a Christmas party without a little guacamole? I mean, I live in LA, so I’ve gotta take advantage of the year round avocados that are available to me!
So let’s just talk about holiday parties here for a second. I’ve been a little swamped recently and I love it! I LOVE being busy. I just find myself way more productive when I have a ton of things to get done. There’s no room for procrastination. Well, unless it involved Pinterest, then it’s kinda like a procrastination and work thing, so it doesn’t count as wasting time. So when it came time to figure out what to bring to a holiday party last week, and I was only allowing myself a few minutes to whip something up, clearly the answer was guacamole. And it can’t just be any kind of guacamole!! It had to be a Christmas Guacamole because it was a Christmas party. And I firmly believe in having themed guacamole’s depending on the event and time of year.
So the Christmas Guacamole was born. It’s awesome. I used some giant Reed Avocados that were super creamy and buttery, threw in some pomegranate seeds and chopped jicama for some crunch, a squeeze or two of lime juice, some salt and pepper and voila! Christmas Guacamole was born.

I love avocados for all their delicious creamy and healthy fat, and what’s not to love about guacamole? But, currently my favorite way to use them is to small dice an avo and mix it (slightly mash it) with broccoli florets– makes a chunk dressing. Add a squeeze of lemon, some crushed red pepper and some toasted pumpkin seeds and it’s an easy lunch salad or a side dish. SImple but super effective and yummy!

Yum. My favorite thing to do with avocados is make grilled cheese sandwiches with fresh mozzarella, tomatoes and avocado. Hmm, that might be tonight’s dinner.
Avocado eggrolls, Avocado buttercream frosting, Avocado cake, Avocado Soup, Shrimp and Avocado salad, Avocado roasted corn and black bean salad, and of course guacamole.

Mmm I’ve been wanting to try these avocados! I love to mix up a little vinaigrette and pour it into the hole where the avocado seed was, and just eat the whole thing plain with a spoon. Simply delicious!

That’s an awesome recipe! I bet the jicama adds a nice little crunch. I love adding avocados to almost all of my dishes. My favorite thing is to make an avocado smoothie. I’ll add ice, avocados, condensed milk and some low fat half and half. Very delish dessert. Sometime I’ll add tapioca balls to make it a bubble tea drink.

My fav thing to do with avocados is guac or a simple spread for a veggie sandwich.
I make a Green Salad that has avocados, tomatoes, cucumbers, and spring onions and I mix in an Italian dressing.
Now I’m craving avocados. And my favorite thing to do with them is mash them on toast with Maldon salt and good pepper. Though I tried some with lavender salt last time I was in SF and they were awesome.

This is genius! My favorite thing to do with avocados is definitely guacamole! You can never have too much.
Besides guacamole, I like to make a sandwich with homemade bread, cream cheese, sliced avocado, sliced tomato, torn basil, and a springing of salt and pepper. Yum!!

Just realized I always put tomatoes in my guacamole… guess I’m festive all year ’round.

Lately, I’ve been eating my avacados with a spoon from the shell. But when I’m not being lazy, I love to make guacamole or use them to top your chicken chili recipe.

I just love guacamole and living in the midwest is not always the best place to find good avocados.
I like to take diced avocados and add them to a salad of roasted pineapple with a little cayanne kick, butter lettuce, pecans and a pear vinaigrette. Sweet, spicy and creamy all in one! Yum!

I love straight avocado dusted with an herb/pepper sea salt. My favored jarred salsa is made with avocado, cucumbers, and jalapenos. Minimal refrigerated shelf life, but I could eat an entire jar as a meal. Have a lovely holiday, Gaby!

I am a California girl so I could stand a little avocado with everything! My favorite, though, is some smashed avo on a piece of toasted SF Sourdough Bread, and then sprinkled with a little garlic salt. I also have a favorite salad I make with red leaf lettuce, green onions, diced avocado and some lemon juice and olive oil. Delightful!

I love avocados and put them into a lot of recipes. My guacamole always has chiles and tomatoes chopped in it – but WOW! Jicama? Going to have to try that one. Sounds wonderful and I just happen to have a big pomegranate sitting on the counter.
One of my other recipes that I like with avocados is a soup. It uses rotisserie chicken – shredded. You pile the shredded chicken in a bowl, add chopped tomato, green onion, some grated cheese, some chopped red onion for crunch (hmmm, jicama would work too) and roasted chile, and then pour hot chicken broth over it all. Squeeze on lime juice and then add chopped avocado and perhaps some baked tortilla strips. Serious comfort food. I usually add a little cumin to the broth. Love this when I’m sick – just have difficulty getting the energy to do all the chopping, although it truly isn’t much!

My in-laws just brought me a couple of those giant avocados from a farm out in Bonsall. I was actually planning to come by your blog for creative ideas to use them.
For me, it’s usually guac but lately I’ve also been making this fantastic green goddess rice, which is basically a thinned out guac with lots of basil or cilantro, tossed with jasmine rice. Amazing!
I had avocado on a burger tonight! However, i can just cut one up and sprinkle salt on it and be happy.

I love, love, love avocados! And I know there is so much you can do with them, but I prefer them straight up on a sandwich – especially a BLT, or a turkey and tomato sandwich; or in a simple guacamole served with crunchy lime and salt tostitos… yum, yum, yum!
I would probably have to say make guacamole, but if I had to post something somewhat original, I love to just spread avocado with some salt and lemon juice on a piece of whole wheat toast for a healthy afternoon snack. Its really yummy and filling.
All you need is four things for the perfect sandwich – some thick wheat bread, turkey, cream cheese, avocado. Throw some sprouts on if you’re feelin’ it. Delicious.

What would I do with sudden wealth in the form of avocados? Gosh, I’d slice them and put them on top of a spinach/wild greens/orange salad. And make guacamole, of course, I’d have to have some plain, with just a bit of lime or lemon juice. Put some in a gooey grilled cheese sandwich with some sprouts. And who knows what else!

My Dad taught me to eat avocados by splitting them in half, removing the seed, then use the skin as a bowl, salt the alvocado, and spoon it out. I have learned to love guacamole, and sliced alvocado on sandwiches, especailly salmon made up like tuna salad. I just love alvocado, doubt if you could serve it in a way Iwouldn’t eat.
What isn’t my favorite thing to do with avocados?! I love it diced & mixed with raw tuna & tobiko with a little ponzo sauce, sliced on any sandwich, topping off a whole wheat cracker with goat cheese, so many uses…of course homemade Guac!
