Tuesday – it’s almost like taco Tuesday but better – Enchiladas Verdes are the name of the game and could be the best enchiladas ever invented! Also bonus if your fam is in town, these feed a crowd and are easily doubled!

Wednesday – Garlic Mushroom + Spinach Pizza feels like the right way to get over hump day and keep it simple before the feast!

    Any tips for the salsa on the enchiladas – tomatillos aren’t in season now. Thanks!

      Kroger/citymarket brand green salsa is good on enchiladas like this recipe. You may be surprised to find tomatillos still! Saw them yesterday at Walmart in Colorado.

    I have hosted Thanksgiving for 30 years. I thought my stuffing was the best until I made your Mushroom Stuffing. My family went crazy over it, and I had to make it again the next day for leftover dinner because it was all gone! I added green peppers and grated carrots just for color. It was delicious. Thanks Gaby. I will make it every year.
