Grilling season is in full swing, which means one of the most common questions I get asked is how to cook steak. So, I rounded up 19 of my favorite summer steak recipes for you to keep on rotation all summer long!
There's a little bit of everything from flank steak to rib-eye steak, to skirt steak and everything else in between. So start making your grocery list... these are good!

FLANK STEAK & SKIRT STEAK:
Grilled Skirt Steak with Tomato Salad – Someone recently asked me for one of my favorite steak recipes. And this Grilled Skirt Steak with Tomato Salad was my OG. I used to make this for my clients when I was a private chef on a weekly basis. It was frequently the star of the show for their Sunday night dinner parties, and I've been making it ever since.
Grilled Flank Steak with Salsa Verde – This Grilled Flank Steak is marinated in a red wine or balsamic vinaigrette and then slapped on the grill. The salsa verde gets whirled up in a food processor and slathered on top before it's time to eat.
Grilled Flank Steak with Poblano Pico – A perfectly seasoned Grilled Flank Steak with a fun Poblano Pico topping!! Perfect for a quick grilling weeknight meal or weekend treat!
Chipotle Flank Steak with Corn Salsa - It's got a kick, and OMG, you'll love it.
Steak Tacos with Corn Salsa – These Steak Tacos with Corn Salsa bring me back to my days in Arizona when we'd hop over the border for some incredible street tacos on the weekend.
Spicy Beef Fajitas (with a Cilantro Lime Marinade) - Hot sizzling meat and veggies fresh off the stove, wrapped in a warmed tortilla and slathered with guacamole and salsa. Nothing sounds better right now. The secret to great fajitas is all about the marinade, and this cilantro lime one is insane.
RIB EYE STEAK + TRI TIP STEAK + SIRLOIN STEAK:
Santa Maria Tri-Tip – One of my favorite steak recipes to feed a crowd is with a giant platter of tri-tip. It doesn't take much to prep, and it's always delicious.
Tri-Tip Tacos – Traditionally, tri-tip is barbecued over cherry oak chips and briquettes, but a gas grill will do the trick – easier in my opinion. Then it's sliced or diced and served alongside salsa and guacamole so you can DIY your own Tri-Tip Tacos.
Grilled Rib Eyes with Compound Herb Butter – Inspired by my time in Italy, this grilled rib eye steak with herb compound butter screams summer! It's one of those steak recipes that's easy to make but looks way more impressive.
Grilled Beef Kebabs - Beef Sirloin is one of my favorite cuts of beef for grilling. This recipe has the easiest and most delectable marinade. Then it gets threaded on skewers with various veggies and drizzled with the most amazing scallion sesame seed sauce!
Beef Bulgogi Lettuce Wraps - I've been making these Beef Bulgogi Lettuce Wraps since back in the private chef days. They were always a hit with my clients as they are packed with flavor, a fun dinner item, and can be made into incredible leftovers. The meat is marinated in sesame oil and soy sauce along with pear for some sweetness and garlic, all of which leads to some truly flavorful meat.

Loaded Steak Salad Bowl with Green Goddess Dressing – This Loaded Steak Salad Bowl with Yogurt Green Goddess is SUMMER PERFECTION and one of my favorite steak recipes. The green goddess dressing is bright and green and flavorful and tangy, and perfect on top of a loaded steak salad.
Peach and Stone Fruit Grilled Steak Salad – This Loaded Grilled Steak Salad has all the things, tons of market greens, plenty of ripe heirloom tomatoes, peaches or nectarines, avocado, scallions, corn, and my cilantro vinaigrette to tie it all together. You'll be obsessed!
Guacamole Steak Salad – Steak grilled to perfection. Tossed with everything you'd need to make a traditional guacamole, avocados, tomatoes, red onions, you name it. And then served on a bed of baby romaine lettuce or butter lettuce to make it a knife and fork kinda salad.
Steak Caprese – A spin on a traditional Caprese Salad…. but this time with steak! This all-in-one meal is the perfect main/side/salad of summer.
Rice Noodle Salad with Steak – Between the subtle heat from the dressing, those addictive cucumbers, the perfect marinated and cooked steak, and the noodles… this rice noodle salad with steak is perfection. It's one of my favorite steak recipes for any weeknight when you need dinner on the table in a flash!
Flank Steak Burrito Bowls – You'll love these steak burrito bowls. I've simplified them a bit so we can all make them at home for a fraction of the cost and have TONS of leftovers to pack for lunches all week long.
STEAK PIZZAS:
Parmesan Pecorino Steak Flatbread - Last but not least, summer steak recipes would not be complete without PIZZA! Perfectly thin slices of flank steak on top of a cheesy, lemony flatbread!
Calabrian Chili Steak Pizza – Steak meets Pizza with a Calabrian Chili Dressing. GAME OVER GUYS. This is incredible.

Grilled Skirt Steak with Tomato Salad
Ingredients
For the Steak + Marinade
- 2 pounds hanger or skirt steak
- ⅓ cup olive oil
- 2 garlic cloves chopped
- 2 tablespoons red wine vinegar
- ¼ cup soy sauce
- 4 tablespoons agave nectar or honey
For the Tomato Salad
- 1-2 pints cherry tomatoes halved
- 2-3 tablespoons olive oil
- Kosher salt
- Freshly cracked black pepper
- 1 handful of fresh arugula or upland cress
- ⅓ red onion thinly sliced
Instructions
- Combine the ingredients for the marinade in a large non-reactive bowl. Add the steak and marinate for at least 2 hours up to 24.
- Heat a grill over medium high heat.
- Remove the steak from the marinade and generously season with salt and pepper. Place the steak on the grill and grill for 4-6 minutes on each side, turning 90 degrees halfway through to get crisscross grill marks.
- Cook until medium/medium rare, or medium, depending on your preference, and then remove to a cutting board and let rest for 10 minutes.
- In a large bowl, toss the halved cherry tomatoes with a few tablespoons of olive oil, salt, pepper, arugula and red onions.
- Slice the steak against the grain and top with the tomato salad. Serve immediately.
