It's almost that time of year when I call it quits in the kitchen and shift to outside cooking as much as possible!! We are talking Grilled White Pizza, Chicken Burgers, Baby Back Ribs, and so much more. So one thing is for certain... we need PLENTY of grilling ideas to get us through this summer. So, without further ado.... let's talk easy grilling ideas for ANY DAY OF THE WEEK!

Grilled BBQ Chicken Pizza - One of my favorite grilling ideas is cooking pizza on the grill. This BBQ Chicken Pizza is basically all of your favorite flavors from BBQ Chicken onto a pizza with a grilled pizza crust! You'll be obsessed.

Grilled White Pizza - White pizza is basically pizza without the red sauce. Instead I use a combination of olive oil and garlic and then top it with copious amounts of cheese and topped it all off with caramelized mushrooms, basil and red onions for some extra crunch.

Grilled Peach and Prosciutto Pizza - I’m upping the ante on the perfect summer pizza with a grilled crust AND my fav stone fruit – fresh peaches. There’s some fresh mozzarella, basil because it enhances just about everything, prosciutto to give it a salty bite, and a garlic olive oil mixture to bring it all together.

Chicken Caesar Salad Pizza - Imagine your fav Chicken Caesar Salad but on a Pizza!!! You're welcome.

Grilled Burrata Pizza with Crispy Prosciutto - Grilled flatbread, creamy burrata, fried pieces of prosciutto, and some fried basil on top. It's perfection.

Pesto Pea Pizza - For those spring and summer months when you want a fun creative spin on your weekly pizza night.

The marinade is packed with crushed red pepper flakes, sweet paprika, red wine vinegar, tomato paste, garlic and lemon juice. It’s one of my favorite easy weeknight grilling ideas.

Grilled Skirt Steak with Tomato Salad - Someone recently asked me for my most favorite steak recipe of all times. And this Grilled Skirt Steak with Tomato Salad was my OG. I used to make this for my clients when I was a private chef on a weekly basis. It was frequently the star of the show for their Sunday night dinner parties and I’ve been making it ever since.

Cheddar Jalapeno Chicken Burgers with Guacamole - If you're stuck in a burger rut this juicy chicken burger is the answer. It's not only stuffed with shredded cheddar cheese, cilantro and jalapeños, but it’s enhanced even more with the addition of guac, sour cream, and some pico. It's incredible.

BBQ Baby Back Ribs - Need ribs grilling ideas? These are slowly cooked for a few hours in the oven and then finished off on the grill so by the time you take a bite, the meat is FALLING OFF THE BONE. They are also doused with this homemade Dr. Pepper spiked BBQ sauce that will make you weak in the knees.

Roasted Pepper and Corn Salad - When corn is coming out of your ears during the summer months and you're looking for grilling ideas other than corn on the cob try this Roasted Pepper and Corn Salad! 

Grilled Green Beans - One of my go-to grilling ideas are grilled veggies. They make such an easy summer side dish. And these Grilled Green Beans taste like candy - I kid you not - these are in fact the best green beans you'll ever make!

Grilled Broccolini - There’s really not a veggie that can’t benefit from some flavorful seasoning and some time on the grill! Grilled Broccolini is so simple toss it with some oil, give it a good char, and then douse it with some lemon to boot and voila. 

Grilled Shishito Peppers - These Grilled Shishito Peppers up the ante and are the easiest appetizer of all times.

Grilled Artichokes with Lemon Basil Vinaigrette - Now, these aren’t just any grilled artichokes. They are steamed first, then brushed with some oil, and then grilled/charred to perfection and served with a lemon basil vinaigrette!

Chipotle Grilled Chicken Lettuce Wraps

These slightly spicy / smoky Chipotle Grilled Chicken Lettuce Wraps are equal parts addictive and delicious!!

Ingredients
  

For the Chicken + Marinade

  • 2 tablespoons olive oil
  • 2 tablespoons water
  • 3-4 chipotle peppers in adobo
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • ½ teaspoon dried oregano
  • ½ teaspoon black pepper
  • 10 boneless skinless chicken thighs cut in half

For the Lettuce Wraps:

  • 1 head butter lettuce
  • 2 mangos cut into thin strips
  • ½ red onion thinly sliced
  • ½ orange bell pepper thinly sliced
  • 2 avocados thinly sliced
  • fresh mint
  • fresh cilantro
  • 1-2 limes, juiced
  • kosher salt and freshly cracked black pepper to taste

Instructions
 

  • Put the ingredients for the marinade in a food processor or blender and blend until smooth. Coat the chicken thighs in the marinade and refrigerate for 1-4 hours.
  • After marinating, Heat an indoor or outdoor grill to about 400 degrees F (medium high heat). Place the chicken onto the grill and grill 5 to 6 minutes per side, until the chicken is cooked. Remove the chicken from the grill and let rest for 10 minutes.
  • Meanwhile - clean the butter lettuce and separate it into cups.
  • Combine the mango, red onion, bell pepper, avocado, mint, cilantro and lime juice in a bowl and toss to combine. Season with salt and pepper.
  • Assemble the lettuce cups with a piece of chicken, a few tablespoons of the topping and serve with extra limes if needed.

Notes

Romaine and green leaf also hold up well for wraps if you can't find butter lettuce.
