Tuesday - Taco Tuesday is happening again with Picadillo Tacos If you're feeling crazy full from the weekend, swap the tortillas for lettuce wraps and go carb free.
Wednesday - Lemon Chicken Pasta - yes please! I love this one because I'll make a full recipe and then Thomas and I can both have it for lunch on Thursday.
Thursday - Avocado + Shrimp Quinoa Bowls that are doubling as leftover lunches on Friday! How much do I love a leftover for lunch situation? A LOT!
Friday night we're having people over for some Cochinita Piblil Tacos!!
For breakfasts this week I'm really into a mini frittata moment!
