It's a busy week this week, my cookbook comes out in 2 days, so let's make it extra easy by lining up all of our dinners, a few breakfasts, a little something something for dessert and some leftovers for lunch! Here we go!
Sunday – Arugula Pesto Pasta with Shrimp! It’s still my favorite and there's no end in sight.
Monday – Chicken Parm Meatballs please! Throw in a side of broccolini too!
Tuesday – Grilled Salmon Skewers with Basil Vinaigrette because SUMMER IS COMING!
Wednesday – Shredded Mexican Chicken Tacos with guacamole, bean dip and queso! This chicken recipe can't be easier!
Thursday – Chipotle Chicken Lettuce Wraps!! My fav when it comes to flavor!
Friday - Grilled Fish + Cauliflower Rice Bowls!
and for a little something sweet to get you though the week, THESE Coconut Chocolate Chip Cookies
and for breakfast... I'm making a Broccolini Quiche that I can pop in the microwave or on the stovetop and heat up before I hit the road every morning!
I also think a grocery list would be amazing. You could print it up Sunday morning and hit the stores!

Do you have a weekly shopping list perhaps? I know I’m lazy, but also busy, and would love to just check the cupboard/fridge against a list before hitting the shops quickly after work on a Monday! 🙂

The Mexican chicken is a favourite in our house. We love the basil vinaigrette too. Good to see new ideas for using them.
