Happy Sunday!! Spring is so close I can taste it and I’m pretty sure we are all thrilled! Let’s get busy prepping for the week and figuring out what we are going to EAT!
Sunday – Chicken Enchiladas Verdes is the name of the game tonight! Works our perfectly as I’ll chow down on leftovers for a few days this week for lunches!
Monday – Miso Marinated Black Cod! Such an easy meal to prepare and totally freaking delish. Reminds me of the old private chef days when we’d make it weekly because everyone was obsessed! Thanks for the inspo Nobu!
Tuesday – Chicken Tawook Quinoa Bowls! One of my favorite meals of all times.
Thursday – we’re going with my go-to Kale Salad with Salmon! It’s priceless. Truly one of the best dinner salads ever created! You’re welcome
Friday – Linguini with Clams because I dream about this on the regular! It’s one of those 15 minute meals and you can’t go wrong. Sub in mussels for the clams if that’s more your thing. Or ditch the shellfish entirely and do some shrimp or chicken!
And for some make ahead breakfast items this week – I made Homemade Granola Bars and I’ll serve ’em up with a bit of greek yogurt!
And these Chocolate Chip Cheesecake Cookie Bars are happening for dessert!
