HAPPY SUNDAY guys! We're back in the game after this weekend and I'm ready to get into the grind! This weeks meals are fresh and summery and everything I want in life! Here we go!

Sunday - this Arugula Pesto Pasta with Shrimp is calling my name! Let's all make it and pretend we are in Italy!

Monday – BBQ Chicken Quinoa Salad is happening tonight, because it’s Monday and it makes for a perfect leftover lunch tomorrow! I’m adding some Calabacitas on the side for a few extra veggies.

Wednesday - keep it REALLY easy tonight with Poblano Corn Quesadilla – simple, easy, delicious and perfect with a side of guacamole!

ThursdayRIBS are on the agenda! Because it's quick to prep and easy to make and it's ALMOST THE WEEKEND!

Friday night we're going this Grilled Caesar Salad Pizza!

and something sweet to get you though the week like these Snickerdoodle S'mookies!

and smoothies for breakfast because I'm OBSESSED and I can't get enough!!

  3. Last week you had a quick video(I think?) on your stories with a cashew based smoothie that looked delicious! I think it was cashews/banana/cacao/hemp seeds....Do you happen to have a recipe or ingredient list? Thanks!!!

    1. is the one in my cookbook!! Just added 1 Tbsp of cacao powder and made my own cashew milk!

  5. Tried the quinoa bowl and salmon blt salad this week- the hubby and I both loved them! I was able to use our first batch of garden cherry tomatoes - delish!
