Meal Plan // Week 29

How is it possible that August is almost half over? I don’t want it to end! I need to savor these slow summer months just a little longer. So while I live in denial, here’s what’s on the menu for this week:

Sunday – this Arugula Pesto Pasta with Shrimp is calling my name! Let’s all make it and pretend we are in Italy!

Monday – BBQ Chicken Quinoa Salad is happening tonight, because it’s Monday and it makes for a perfect leftover lunch tomorrow! I’m adding some Calabacitas on the side for a few extra veggies.

Wednesday – keep it REALLY easy tonight with Poblano Corn Quesadilla – simple, easy, delicious and perfect with a side of guacamole!

Thursday – PIZZA NIGHT! BLT Flatbread / Pizza is happening. Half salad / half pizza!

  1. That quesadilla is TOTALLY calling my name! All the heart eyes for that one.

  2. Tried the quinoa bowl and salmon blt salad this week- the hubby and I both loved them! I was able to use our first batch of garden cherry tomatoes – delish!
