Ok we’ve done a lot of main course grilling recently and today we’re breaking down the sides and salads. If you’ve never grilled a salad – get ready to be obsessed. And if you’re turning on the grill for grilled main courses and salads, might as well make some grilled vegetables too!! Here are 21 of my favorite grilled vegetables and grilled salads…

Grilled Artichokes with Lemon Basil Vinaigrette – Now, these aren’t just any grilled artichokes. They are steamed first, then brushed with some oil, and then grilled/charred to perfection and served with a lemon basil vinaigrette!

It’s truly one of the best salads for the season.

Pesto Farmers Market Salad with Grilled Chicken – A loaded farmers market salad with all sorts of fresh produce, bacon, some grilled chicken, and the most delish pesto vinaigrette.
DIY Chipotle Burrito Bowl – My version of a DIY Chipotle Burrito Bowl. These are the perfect meal for a busy weeknight, and you can always count on them being a crowdpleaser. The chicken in this recipe, is bananas. And the secret to how it’s so flavorful is the marinade.
GRILLED STEAK SALADS:
Loaded Grilled Steak Salad – This Loaded Grilled Steak Salad has all the things, tons of market greens, plenty of ripe heirloom tomatoes, peaches or nectarines, avocado, scallions, corn AND my cilantro vinaigrette to tie it all together. You’ll be obsessed!
Loaded Steak Salad Bowl with Green Goddess Dressing – This Loaded Steak Salad Bowl with Yogurt Green Goddess is SUMMER PERFECTION and one of my favorite grilling ideas. The green goddess dressing is bright and green and flavorful and tangy and perfect on top of a loaded steak salad.
Guacamole Steak Salad – Steak grilled to perfection. Tossed with everything you’d need to make a traditional guacamole, avocados, tomatoes, red onions, you name it. And then served on a bed of baby romaine lettuce or butter lettuce to make it a knife and fork kinda salad.
Steak Caprese – A spin on a traditional Caprese Salad…. but this time with Steak! This all in one meal is the perfect main/side/salad of summer.
The Best Grilled Vegetables
- 2 tablespoons olive oil
- 1 teaspoon kosher salt
- ½ teaspoon freshly cracked black pepper
- 2 medium zucchini cut in half lengthwise
- 2 medium yellow squash cut in half lengthwise
- 1 red onion cut into 8 wedges
- 8 patty pan squash cut in half
- 1 sheet Feta cheese
- Fresh Mint
- Fresh Basil
- 1 recipe Lemon Champagne Vinaigrette below
For the Lemon Champagne Vinaigrette
- 1 lemon juiced
- 2 teaspoons champagne vinegar
- 1/3 cup olive oil
- 2 cloves garlic finely chopped
- 1 shallot finely chopped
- kosher salt and freshly cracked black pepper to taste
- Preheat a grill over medium-high heat. Combine the first 7 ingredients in a bowl; toss well to coat. Arrange squash in a single layer on the grill and grill for 5 minutes total, turning halfway through.
- Once grill marks appear on both sides and the squash is cooked, remove from the grill and transfer to a serving platter. Slice the zucchini and yellow squash into 1 inch pieces. Crumble the sheet of feta on top, sprinkle with fresh mint and basil leaves and drizzle with the vinaigrette. Adjust salt and pepper as needed and serve immediately.
